Rock Samphire with Capers Recipe

Rock Samphire lightly roasted with garlic and capers.

125g/5oz Fresh Rock Samphire
2 tbsp Olive Oil
1 large Garlic Clove, very

1. Preheat the oven to 200C, 400F, Gas Mark 6. Bring a large
saucepan of water to the boil, do not add salt, add the
samphire and cook for 3-4 minutes only.
2. Drain the samphire, refresh under cold running water and dry on
