450g/1lb Okra, fresh or frozen (thawed)
Oil for shallow frying
1 tbsp Medium Curry Powder (check ingerdients)
1 tbsp Ground Turmeric
1 Onion, chopped
1 Green Capsicum (Sweet Pepper), diced
½ teasp Ground Cinnamon
1 tbsp Sugar
1 tbsp Lime Juice
1. Heat the oil in a frying pan until hot then add the okra (making sure they
are dry) and fry until golden brown on all sides.
2. Add the curry powder, turmeric, onion, green pepper, cinnamon, salt and sugar
mix well and cook for 3-5 minutes, turning from time to time.
3. Remove from heat, stir in the lime juice and serve immediately.
