Artichokes Du Barry Veg HT ACC 35mins Serves 4 Hot Vegetarian Vegetables Accompaniment Eggless
Ingredients 1 Small Cauliflower Salt and White Pepper 1 x 400g/14 oz Tin of Artichoke Fronds 25g/1oz Butter For the Sauce 25g/1oz Butter 25g/1oz Plain Flour 300ml/10 fl.oz. Milk 100g/4oz Cheddar, grated
Instructions
1. Preheat the oven to 220C, 425F, Gas mark 7. Divide the cauliflower into florets, cutting away any large stalks. Cook in boiling salted water for 10 minutes until just tender.
2. Meanwhile, drain the artichokes, place in a saucepan with the butter and gently heat through.
3. Make the sauce by melting the butter in a saucepan and stirring in the flour. Cook for 1-2 minutes and remove from heat. Gradually stir in the milk, little by little, stirring all the time. Return to heat, bring to the boil, still stirring and cook for 3-4 minutes. Remove from heat, stir in half the cheese and season to taste.
4. Place the artichokes in a greased ovenproof dish, top with a cauliflower floret then carefully pour the sauce over. Sprinkle with the remaining cheese and bake in the oven for 10-15 minutes until the cheese has melted and browned.
