Raw Beetroot (about 200g/7oz each)
Cream to serve
Preheat the oven to 180C, 350F, Gas mark 4. Wash the beetroot but do not trim.
Lightly grease 4 pieces of foil, each large enough to wrap 1 beetroot. Place a
beetroot on each piece of foil, sprinkle with
salt and pepper, add a knob of butter then wrap tightly. Bake for 2-3 hours.
To serve - Unwrap the parcels and top each beetroot with a dollop of soured
cream. Serve hot
