Brussels Sprouts with Sesame Veg HT ACC 20mins Serves 4 Hot Vegetarian Vegetables Fruit Accompaniment Eggless
Ingredients 600g/1¼ lb Brussels Sprouts, washed and trimmed 50g/2oz Butter 1 Onion, finely chopped 1 Garlic Clove, crushed 25g/1oz Plain Flour 4 tbsp Tahini Paste 1 Vegetable Stock Cube 330ml/11 fl.oz. Orange Juice 150ml/5 fl.oz. Water 1 teasp Honey 2 teasp Sesame seeds
Instructions
1. Cut an ' X ' into the base of each sprout and drop into a bowl of cold water. This will enable the sprout to cook more evenly.
2. Bring a pan of salted water to the boil, add the sprouts and cook for 8-10 minutes until only just tender.
3. Meanwhile, melt the butter in a pan, add the onion and garlic and sauté for a few minutes until soft and golden. Sprinkle in the flour and cook, stirring, for 1-2 minutes then add the tahini paste and crumbled stock cube and mix well.
4. Gradually add the orange juice and water, stirring all the time and cook until the sauce thickens then stir in the honey, salt and pepper.
5. To serve - drain the sprouts and turn into a warmed serving dish. Pour over the sauce, mix well to coat and sprinkle with sesame seeds. Serve immediately.
