4 Ripe Yellow Plantains,
peeled and thickly sliced
1 tbsp Sugar
1. Melt the butter in a large frying pan and heat until foaming.
2. Add the plantain slices to the pan and cook for 5 to 8 minutes, or
until lightly coloured.
3. Sprinkle the sugar over
the plantains and cook until just caramelised
shaking the pan from time to time to prevent the vegetables from sticking.
4. Remove the plantain slices from the pan and serve immediately.
