A Weekday Menu Recipe



Caramelised Plantain  Veg  HT  ACC  West Indian  20mins


Serves 4      Hot     Vegetarian  Vegetables Accompaniment  Gluten Wheat Free  Eggless  Caribbean  West Indies  Nth American  North American




25g/1oz Butter

4 Ripe Yellow Plantains, peeled and thickly sliced

1 tbsp Sugar





1. Melt the butter in a large frying pan and heat until foaming.


2. Add the plantain slices to the pan and cook for 5 to 8 minutes, or until lightly coloured.


3. Sprinkle the sugar over the plantains and cook until just caramelised shaking the pan from time to time to prevent the vegetables from sticking.


4. Remove the plantain slices from the pan and serve immediately.
