1. Bring a large pan of lightly salted water to the boil, add the shallots and cook for for 8-10 minutes. Drain well.
2. Melt the butter with the sugar in a large saucepan, add the onions and season with salt and pepper.
3. Cook uncovered over a low heat until the onions are cooked through and well glazed, shaking the pan occasionally to evenly coat the shallots and to prevent them sticking. Serve immediately.
