Courgettes Au Gratin Veg HT ACC 50mins
Serves 4 Hot Vegetarian Vegetables Accompaniment
Ingredients: 1kg/2lb Courgettes, (Zucchini) sliced Salt and Pepper 25g/1oz Butter 1 Onion, chopped 2 eggs 6 tbsp Soured Cream 75g/3oz Cheddar Cheese, grated 2 tbsp Fresh White Breadcrumbs
Instructions
1. Place the sliced courgettes in a saucepan and pour in enough water to cover. Add a pinch of salt. Bring the water quickly to the boil, then reduce the heat and simmer for about 5 minutes until tender but still firm. Drain thoroughly and mash well or put in food processor and process to a coarse puree. Heat the oven to 170C, 325F, Gas mark 3.
2. Melt the butter in a frying-pan over medium heat, add the onion and fry until transparent. Add the fried onion to the courgette puree, together with the eggs, soured cream and 3 tbsp of the grated cheese. Blend again until thoroughly mixed, and season generously with salt and freshly ground black pepper.
3. Sprinkle 3 tbsp of the remaining cheese over the base of a shallow, flameproof dish. Pour in the courgette mixture. Combine the breadcrumbs with the rest of the cheese and sprinkle evenly over the surface of the puree.
4. Bake in the oven for about 40 minutes, or until set. Serve immediately.
