Serves 4 Hot Vegetables Grains Herbs Accompaniment Vegetarian Vegan Gluten Wheat Dairy Free Eggless Caribbean Louisiana Nth America North American Ingredients 900g/2lb Pre-Baked Sweet Potatoes 4 tbsp Oil 225g/8oz Cooked Rice 4 Blades Mace 2 teasp Fresh Oregano, chopped 1.1L/40fl.oz. Tomato Juice 2 tbsp Lemon Juice Salt and Pepper Instructions 1. Peel the sweet potatoes, cube the flesh and place in frying pan with oil, rice, crushed mace, oregano, tomato and lemon juice and salt and pepper. Mix well. 2. Cook over medium heat, stirring occasionally, until all the liquid is absorbed. Serve hot.
