Deep Fried Courgettes Veg HT ACC 40mins Serves 4 Hot Vegetarian Vegetables Accompaniment EgglessIngredients: 450g/1lb small Courgettes (Zucchini) 1/2 Onion, chopped 1 Bay Leaf 1/4 teasp Ground Nutmeg 300ml/10 fl.oz. Milk Seasoned Flour Oil for deep frying Instructions 1. Trim and thinly peel the courgettes, cut into strips about 5cm /2 inches long and place in a bowl with the chopped onion, bay leaf, ground nutmeg and black pepper. Pour over the milk and leave to soak for 30 minutes. 2. Drain the strips, dry well on kitchen paper and roll in seasoned flour. 3. Heat the oil in a deep-fat fryer to 180C, 1350F. A bread cube will turn brown in 60 seconds at this temperature. Deep-fry the courgettes in the hot oil for 2 minutes until golden. Drain on kitchen paper and serve immediately.
