Smoked Streaky Bacon
tbsp Fresh Parsley, chopped
Peel the swedes, wash and cut into fingers about 12mm/1/2inch thick. Put into a
saucepan of lightly salted cold water with the bouquet garni and bring to
the boil. Simmer gently for 10 minutes.
Meanwhile, derind and dice the bacon. Peel and finely chop the onion. Heat
the oil in a frying pan, add the bacon and
onion and fry over a high heat, stirring frequently, until golden.
Drain the vegetables thoroughly, discarding the bouquet garni. Add to the frying pan
with the salt, pepper and 4 tbsp of Water. Stir gently, cover and cook gently
for 10 minutes.
Season to taste, arrange in a serving dish and sprinkle with parsley. Serve
