Pumpkin Flesh, diced
240ml/8fl.oz. of the water in a large saucepan and bring to the boil. Add the
rice and stir well. Reduce the heat, cover and simmer for 20 minutes, checking
from time to time to prevent burning.
2. Meanwhile, in
another medium saucepan, melt the butter, add the onions and sauté over a
medium heat until soft and transparent.
3. Add the
pumpkin, apricots, salt and remaining water to the onions, stir well, partially
cover and cook for 20 minutes.
4. Add the rice to
the pumpkin mixture, mix well and continue to cook for a further 10 minutes, or
until pumpkin is tender.
