Green Beans in Sofrito Sauce HT ACC Sth American 50mins Serves 4 Hot Vegetables Pork Accompaniment Dairy Gluten Wheat free South America
Ingredients 2 Rashers Streaky bacon, diced 1 Slice Ham, diced (check ingredients Label) 1 Onion, chopped 1/2 Green Capsicum, (sweet pepper) seeded and chopped2 tomatoes, chopped 1 Garlic Clove, crushed 180ml/6 fl.oz. Water 450g/1lb Green beans 50g/2oz Olives, chopped 6 Capers, chopped 1 teasp Freshly chopped Oregano Salt and Black Pepper
Instructions
1. In a large saucepan, fry the bacon until the fat begins to run then add the ham and onion and cook for a few minutes.
2. Add the tomatoes, garlic and capsicum together with half the water and cook over a low heat for 5 minutes, stirring constantly.
3. Break the beans into short lengths and add to the pan together with the olives, capers, oregano, salt, pepper and the remainder of the water. Cover and simmer for 25 minutes. Serve hot.
