Honeyed Carrots Veg HT ACC 30mins Serves 4 Hot Vegetarian Vegetables Accompaniment Gluten Wheat Free Eggless
Ingredients: 450g/1lb Carrots, sliced 8 Coriander Seeds, finely crushed Salt 25g/1oz Butter 2 tbsp Runny Honey A little extra Butter
Instructions
1. Place the carrots in a saucepan and add the coriander, salt, butter and the honey. Pour in just enough water to come three-quarters of the way up the carrots. Bring to the boil, cover and simmer until just tender.
2. Remove the lid and bring the liquid back to the boil. Boil vigorously until the liquid has reduced to a syrupy glaze, shaking the pan as necessary to prevent the carrots sticking.
3. Swirl in the extra butter and turn the glazed carrots into a warm serving dish.
