Plantain Fries Veg

Ingredients:
1 Large Plantain 4 teasp Salt
1.1L/40fl.oz. Water
6 tbsp Vegetable Oil
The Juice of 2 Limes
Instructions
1.
Peel the plantain and cut diagonally into 12.5mm/1/2 inch slices.
2. Place 3 teaspoons of the salt in a large bowl, together with the water and stir to dissolve. Add the plantain slices and leave for 20 minutes.

After this time, drain the plantains slices well and pat dry on kitchen paper.

Heat the oil in a large frying pan, add the dried plantain slices and
sauté, very gently,
for 10 minutes turning from time to time. Do not brown.
5. Remove from the pan with a slotted spoon and place between two pieces of kitchen paper and blot well to remove the excess oil.
6.
Place the lime juice in a small bowl and add the remaining salt. Mix well.
7.
Reheat the oil in the frying pan, dip each plantain slice into the lime mixture
then fry on both sides until crisp.
8. Drain the slices on kitchen paper and sprinkle with a little extra salt. Serve immediately.
