275g/10oz Fresh Coconut, grated
1 Small Onion, finely chopped
900gg/2lb Fresh Spinach
1 teasp Lemon Juice
Salt and Black Pepper
Place the milk in a saucepan, add the coconut and bring to the boil very

Wash the spinach well and place in a large saucepan with only the water clinging
to the leaves. Add the coconut cooking liquor and the remaining ingredients.
Cover and cook over a low heat for 15 minutes, shaking the pan from time
to time. Serve very hot immediately.
