Polynesian Spinach Veg HT ACC 35mins plus soaking
Serves 4

Vegetarian Accompaniment
Ingredients:
240ml/8fl.oz. Milk
275g/10oz Fresh Coconut, grated
1 Small Onion, finely chopped
900gg/2lb Fresh Spinach
1 teasp Lemon Juice Salt and Black Pepper
Instructions
1.
Place the milk in a saucepan, add the coconut and bring to the boil very
slowly. Remove
the pan from the heat and allow to stand for 30 minutes. After this time, strain
and discard the coconut.
2. Wash the spinach well and place in a large saucepan with only the water clinging to the leaves. Add the coconut cooking liquor and the remaining ingredients. Cover and cook over a low heat for 15 minutes, shaking the pan from time to time. Serve very hot immediately.
