Ingredients
1 Aubergine, (eggplant ) thickly sliced
Salt and Black Pepper 4 tbsp Olive Oil
2 Onions, sliced
3 Courgettes, thickly sliced 4 Tomatoes, quartered
1 Garlic Clove, crushed
1 Bay Leaf
Instructions
1. Place the aubergine slices in a colander, sprinkle generously with salt and leave for 20 minutes. Drain, rinse under cold running water and dry well on kitchen paper.
2. Heat the oil in a large pan, add the onions and garlic and sauté gently until soft and transparent.
3.
Add the remaining ingredients to the pan, cover and simmer very gently for about 30 minutes, stirring from time to time.
