Red Cabbage with Pears Veg HT ACC 135mins Serves 4 Hot Vegetarian Vegan Vegetables Fruit Accompaniment Dairy Gluten Wheat Free EgglessIngredients: 1 Garlic Clove, cut in half lengthways 675g/1˝lb Red Cabbage, finely shredded 2 Large firm Pears, peeled, cored and thickly sliced Salt and Pepper 150ml/5 fl.oz. Fresh Vegetable Stock 2 tbsp Lemon Juice A Knob of Butter (optional - not suitable for vegans) Instructions 1. Rub the garlic around the sides of a large ovenproof casserole dish. Place half the shredded cabbage in the dish then top with a layer of pears. Season with salt and pepper then repeat the layers. 2. Pour over the stock and lemon juice and bake in the oven for 1˝ to 2 hours until tender. 3. To serve - add a knob of butter (if using), adjust the seasoning and mix well. Serve hot.
Lovely served with Goose, turkey or game birds especially at Christmas or Easter.
