Instructions 1. Preheat the oven to 200C, 40OF, Gas mark 6. Wash the sweet potatoes gently to avoid breaking the skins. Arrange on a greased baking tray and bake in the centre of the oven for about 45 minutes until tender when pierced with a skewer. 2. Arrange on a warmed serving dish and cut open along the top. Sprinkle a little salt and pepper into each and top with a knob of butter. Serve immediately. Traditionally roast with pork at Christmas
