Roman Swiss Chard HT ACC Italian 30mins Serves 4 Hot Vegetables Fish Accompaniment Healthy Eating Dairy Gluten Wheat Free Eggless Italy EuropeIngredients: 900g/2lb Swiss Chard 2 Garlic Cloves, crushed 3 tbsp Olive Oil 4 Anchovy Fillets, chopped 1 x 400g/14oz tin Tomatoes Salt and Black Pepper Instructions 1. Wash the Swiss chard, discarding any damaged parts, and cut into 5cm/2inch pieces. 2. Heat the oil in a large saucepan, add the garlic and fry until pale golden. Remove from the pan and discard. 3. Add the anchovies to the pan with the tomatoes and juice. Bring to the boil and simmer uncovered for 15 minutes. 4. Meanwhile, cook the chard in lightly salted boiling water for 15 minutes until tender. Drain thoroughly and add to the tomatoes with plenty of pepper. Stir over a low heat for 5 minutes until coated with the sauce. 5. Adjust the seasoning to taste, then arrange the chard in a warmed serving dish and serve immediately.
