Romanian Pumpkin HT Veg ACC 70mins
Serves 4 Hot Vegetarian Vegetables Accompaniment Eggless Romania Europe
Ingredients 675g/1˝lb Pumpkin, peeled 2 tbsp Butter 1 Onion, finely chopped 1 tbsp Flour 240ml/8fl.oz. Hot Water A large Squeeze of Lemon Juice 120ml/4fl.oz. Single Cream
Instructions
1. Cut the pumpkin flesh into julienne strips about 5cm/2 inches long. Set aside.
2. Melt the butter in a medium saucepan, add the onion and sauté until soft. Add the flour, blending well, and cook for 2 minutes stirring all the time.
3. Slowly add the water, stirring constantly until the mixture thickens then add the pumpkin and stir to mix. Cover the pan and cook the over low heat for 45 minutes, or until tender.
4. Add the lemon juice and cream and heat over a medium heat, stirring constantly, until warmed through. Serve immediately.
