Salsify and Apple Sauté Veg HT ACC English 25mins
Serves 4 Hot Vegetarian Vegan Vegetables Fruit Accompaniment Gluten Dairy Free Eggless England British Europe
Ingredients 2 tbsp Lemon Juice 4 Salsify Roots, peeled 1 tbsp Olive Oil Salt and Black Pepper 2 small Apples, peeled and cored
Instructions
1. Place the lemon juice in a bowl of water which is large enough to hold the salsify.
2. Cut the salsify into batons about 12mm/˝ inch x 12mm/˝ inch x 5cm/2 inches long, immediately submerging them in the lemon water to prevent discoloration.
3. Cut the peeled apples into quarters then cut each quarter into three pieces.
4. Heat the oil in a large frying pan over a medium heat.
5. Meanwhile, drain the salsify and dry on kitchen paper then add to the frying pan and sauté gently for about 8 minutes. Season with salt and pepper.
6. Add the apple slices to the pan and continue to cook for 5-8 minutes, turning, until golden brown.
7. Adjust the seasoning and serve hot.
