Savoury Mashed Pumpkin HT Veg ACC 55minsServes 4 Hot Vegetarian Vegetables Accompaniment Ingredients 1.8kg/4lb Pumpkin, peeled, deseeded and cut into chunks 25g/1oz Butter 1 Onion, finely chopped 50g/2oz Breadcrumbs 1 Egg 120ml/4fl.oz. Milk 50g/2oz Cheddar Cheese, grated 1 tbsp Freshly Chopped Parsley Salt & Pepper Extra grated Cheddar Cheese for topping Instructions 1. Place the pumpkin chunks in a large saucepan, cover with water, bring to the boil then cook for 10-15 minutes until tender. 2. Meanwhile, melt the butter in a frying pan, add the onion and sauté until soft and translucent. Set aside. 3. Preheat the oven to 170C, 325F, Gas Mark 3 and lightly grease a shallow oven proof dish. Drain the pumpkin well, return to the pan and mash coarsely with a fork or potato masher. 4. Add the onion, breadcrumbs, egg, milk, cheese, parsley, salt and pepper to the mashed pumpkin and mix well. Transfer to the prepared oven proof dish, sprinkle evenly with the extra grated cheese and bake for 30 minutes or until cheese is golden and bubbling. Serve immediately.
