Spiced Red Cabbage Veg HT ACC 120mins Serves 4 Hot Vegetarian Vegan Vegetables Dried Fruit Accompaniment Healthy Eating Gluten Wheat Dairy Free Eggless Ingredients 450g/1lb Red Cabbage, shredded 2 Onions, chopped 2 Cooking Apples, peeled, cored and chopped 3 tbsp Olive Oil 50g/2oz Raisins Salt 2.5cm/1 inch Cinnamon Stick 1/4 teasp Ground Cloves 1 tbsp Brown Sugar 2 tbsp Lemon JuiceInstructions 1. Put the cabbage into a large saucepan, cover it with cold water and bring tip to the boil; drain in a colander. 2. Fry the onion and apple in the oil in the same large saucepan for 5-10 minutes, then add the cabbage, raisins, salt, cinnamon, ground cloves, sugar and 1 tbsp of the lemon juice. Stir well, cover with a lid and cook over a gentle heat for 1 1/2 hours, stirring occasionally. 3. To serve, remove the cinnamon stick, taste the cabbage and add the rest of the lemon juice if necessary. This would be a festive accompaniment to serve with Turkey or pork at Christmas and Easter.
