Sweet 'n Sour Red Cabbage HT ACC 80minsServes 4 Hot Vegetables Pork Fruit Alcohol Accompaniment Dairy Gluten Wheat Free Eggless
Ingredients 900g/2lb Red Cabbage, cored and shredded 50g/2oz Streaky Bacon, chopped 1 Onion, chopped 1 Large Apple, chopped 6 Whole Allspice, crushed ½ teasp Salt 2 teasp Honey 90ml/3 fl.oz Red Wine (check manufacture)
Instructions
1. Fry the bacon in a large pan without added oil, until beginning to brown then add the onions and cook for 5 minutes.
2. Add the chopped apple and shredded cabbage together with the allspice, salt, honey and red wine. Stir well to coat the apples and cabbage.
3. Cover and simmer for 1 hour. If necessary, at the end of the cooking time, increase the heat and boil rapidly to reduce any excess liquid.
