Sweet 'n Sour Red Cabbage

Serves 4 Hot Vegetables

Gluten Wheat Free Eggless
Cabbage, cored and shredded
Streaky Bacon, chopped
1 Large Apple,
½ teasp Salt
2 teasp Honey
Red Wine (check manufacture)
1. Fry the
bacon in a large pan without added oil, until beginning to brown then
add the onions and cook for 5 minutes.
2. Add the
chopped apple and shredded cabbage together with the allspice, salt, honey
and red wine. Stir well to coat the apples and cabbage.
3. Cover and
simmer for 1 hour. If necessary, at the end of the cooking time, increase
the heat and boil rapidly to reduce any excess liquid.
