x 400g/14oz tin Pineapple Pieces
Small White Marshmallows
Preheat the oven to 150C, 35OF, Gas mark 4. Peel the sweet potatoes and cut into
neat cubes. Put into a pan of lightly salted cold water and bring to the boil. Cover
and simmer for 5-10 minutes till tender.
2. Drain thoroughly, then toss in the butter
until lightly coated. Arrange in the ovenproof dish.
Drain the pineapple and scatter the pieces over the sweet potato. Arrange the marshmallows
on top. Bake in the centre of the oven for about 25 minutes until the marshmallows
are browned and melted. Serve immediately.
