Sweet Potato Bake Ve g HT ACC 45mins Serves 4 Hot Vegetarian Vegetables AccompanimentIngredients 900g/2lb Sweet Potatoes Salt 25g/1oz Butter 1 x 400g/14oz tin Pineapple Pieces 225g/8oz Small White MarshmallowsInstructions 1. Preheat the oven to 150C, 35OF, Gas mark 4. Peel the sweet potatoes and cut into neat cubes. Put into a pan of lightly salted cold water and bring to the boil. Cover and simmer for 5-10 minutes till tender.
2. Drain thoroughly, then toss in the butter until lightly coated. Arrange in the ovenproof dish. 3. Drain the pineapple and scatter the pieces over the sweet potato. Arrange the marshmallows on top. Bake in the centre of the oven for about 25 minutes until the marshmallows are browned and melted. Serve immediately.
