Sweet Potato Rosti Veg

Ingredients
1 large Sweet
Potato, peeled and 1 Ordinary Potato, peeled 1 Egg
50g/2oz Onion,
grated
1 Red Chilli,
deseeded and finely chopped 2.5cm/1 inch
Freshly Grated Ginger
Salt and Black
Pepper
Oil for shallow
frying
Instructions
1. Wash the potatoes dry well on kitchen towel then grate them into a large mixing bowl.
3. Add the egg, onion, chili, ginger, salt and pepper and mix well.
4. Heat the oil in a large
frying pan until very hot. Divide the potato mixture into 8
portions then add to the pan and fry quickly to seal. Turn and seal
the other sides.
5. Turn again and cook for 3 minutes on each side until cooked through. You may have to use two pans or fry in 2 or more batches. Serve hot.
