Swiss Chard and Cheese Bake    Veg  HT  ACC  50mins  

Serves 4     Hot   Vegetarian Vegetables  Accompaniment   Eggless   



900g/2lb Swiss Chard

300ml/10fl.oz. Water

1 tbsp Lemon Juice

Salt and Black Pepper

75g/3oz Butter

4 tbsp Plain Flour

420ml/14 fl.oz. Milk

175g/6oz Cheddar Cheese, grated

150ml/5fl.oz. Single Cream

2 tbsp Fresh Breadcrumbs




1. Wash and pick over the Swiss chard, discarding any damaged parts, and cut into 5cm/2 inch wide pieces.


2. Put the water, lemon juice and a little salt into a saucepan and bring to the boil. Add the chard, cover and simmer for 10 minutes until tender.


3. Preheat the oven to 200C, 400F, Gas mark 6. Drain the chard thoroughly, reserving the cooking liquor, and arrange in an ovenproof dish.


4. Heat the butter in a saucepan, add the flour and cook for 1 minute. Gradually add the milk and reserved cooking liquor and bring to the boil, stirring constantly. Simmer for 2 minutes.


5. Remove the pan from the heat and stir in two-thirds of the cheese and the cream. Season to taste, then pour the sauce over the chard.


6 Mix the remaining cheese with the breadcrumbs and scatter over the sauce. Bake near the top of the oven for 20 minutes till bubbling and golden. Serve immediately.
