Ingredients: 450g/1lb Green Beans, topped and tailed 1 x 400g/14oz Tin Chopped Tomatoes 1 Onion, chopped 2 tbsp Olive Oil 1 Garlic Clove, crushed Bouquet Garni 1 heaped teasp Freshly chopped Oregano Salt and Pepper
Instructions
1. Heat the butter and oil in a saucepan and fry the onions until lightly browned.
2. Add the beans, tomatoes, garlic, bouquet garni, oregano, salt and pepper. Cover and simmer over a very low heat for 1 hour, adding a little extra boiling water during cooking if necessary to prevent sticking. Serve hot.
