Asparagus with Chive Butter en Papillote Recipe

A vegetarian starter made with fresh asparagus laced with a chive butter and baked in a parcel. Ideal for new spring season asparagus

Ingredients

20 small Fresh Asparagus
4 tbsp Softened Butter
4 teasp Freshly chopped Chives
1 teasp Lemon Juice
Salt and Pepper

Instructions

 

1. Preheat the oven to 200C, 400F, Gas Mark 6. Cut four papillote parcels into a heart shape which when folded in half are long and wide enough to take the asparagus with a 5cm/2-inch border all the way around.

2. Place the butter in a small mixing bowl, add the chives, lemon juice, salt and pepper and mix well.

3. Open the paper up, place 5 asparagus spears on one side of the paper close to the fold then top with a quarter of the butter mixture. dotting the butter down the whole length of the asparagus.

4. Fold over the edges so the parcels are well sealed but leaving enough space so they can puff up during cooking. See pictures below showing on how to assemble papillote parcels. Place the parcels on a baking tray and bake for 10 -12 minutes.    End of instructions
