Serves 4-8 as part of a mezethes plate
Hot Vegetarian Vegan Vegetables herbs Appetizer Starter Hors d'oeuvre Buffets Dairy free Greece Mediterranean Europe
Ingredients 450g/1lb Fresh Tomatoes 2 medium Onions, finely chopped ½ teasp Paprika Salt and Black Pepper 25g/1oz freshly chopped Mint 2 tbsp freshly chopped Parsley 1 tbsp Olive Oil 150g/+5oz Self-Raising Flour Vegetable oil for shallow frying
Instructions
1. Place the tomatoes whole into a large mixing bowl and squash them with the hands until they turn to a pulp.
2. Add the remaining ingredients, apart from the flour and mix well.
3. Add the flour a little at a time, until the mixture has the consistency of a thick but moist paste. At this point you can refrigerate the mixture until you are ready to cook them.
4. Heat about 2.5cm/1-inch of oil in a large frying pan until very hot but not smoking, then drop tablespoons of the mixture into the hot oil and fry, turning once, until lightly golden brown on all sides. Serve immediately.
Great to serve at parties or with cocktails too. Just double or treble the recipe.
