Herby Tomato Bruschetta    Veg   CD   HD  Italian  10mins



Serves 4     Cold  Vegetarian  Herbs   Hors d’oeuvre  Appetizer  Starter      Italy  Mediterranean




450g/1lb Ripe Tomatoes, chopped

1 tbsp freshly chopped Basil Leaves

1 tbsp  freshly chopped Marjoram

1 tbsp freshly chopped Parsley

2 Garlic Cloves, finely chopped

1 tbsp Balsamic Vinegar

1 tbsp Olive Oil

1 teasp Lime or Lemon Juice

Salt and Black Pepper

8 x 2.5cm/1-inch thick slices of Baguette, toasted




1. Place the tomatoes, herbs and vinegar, oil and lime juice in a large mixing bowl, season with salt and pepper and mix well.


2. To serve – Place the toasted bread on a serving platter and spoon the tomato mixture over the top.  Serve at room temperature.
