Minted Cucumber with Feta

1 large Cucumber
125g/5oz Feta Cheese, crumbled
1 tbsp freshly chopped Mint
6 tbsp Olive Oil
3 tbsp Lemon Juice
Salt and White Pepper
1. Wash and dry the cucumber and cut it into very thin slices. Place the
slices in a salad bowl, sprinkling with the feta cheese and mint.
2. In a small bowl, whisk together the oil, lemon juice, salt and pepper.
Pour over the salad and toss to coat well. Serve immediately.
