Serves 4-8 as part of a mezethes plate Hot Vegetarian Vegetables Appetizer Starter Hors d'oeuvre Buffet Party Food Greece Europe
Ingredients 450g/1lb Potatoes, peeled and cut into chunks 2 Eggs 175g/6oz Kefalotiri Cheese (substitute Romano or Parmesan) Salt and Pepper Flour for coating Vegetable Oil for shallow frying
Instructions
1. Place the potatoes in a saucepan of cold water, bring to the boil then cook for 20 minutes or until tender.
2. Drain the cooked potatoes well, return to the rinsed out pan and mash with a fork or potato masher until smooth.
3. Add the cheese and eggs to the mashed potatoes, season to taste with salt and pepper and mix well.
4. Using floured hands, shape the mixture into small croquettes and coat with flour.
5. Heat the oil in a frying pan until hot then fry the croquettes in batches, until lightly brown on all sides. Serve warm.
