½ Vanilla Pod, split
120ml/4fl.oz. light Olive Oil
225g/8oz Goats Cheese
125g/5oz Toasted Walnuts, chopped

1. Place the oil and vanilla in a small saucepan over low
heat, and heat very slowly until hot and vanilla is aromatic. Set
aside and allow to cool.
2. Divide the goats cheese into four portions and gently roll in the
chopped walnuts to evenly coat, pressing the nuts into cheese so
that they stick on all sides. Set aside until ready to serve.

the coated goats cheese on the top. Drizzle with a little more of
the vanilla oil and serve immediately.
