Brie with Mushrooms

small Garlic Clove, crushed
tbsp Slivered Almonds
teasp Brandy or Cognac
teasp Freshly chopped Tarragon
Preheat the oven to 180C, 350F Gas Mark 4. Remove the rind from the brie,
cut into large cubes and divide between 4 small ramekins. Set aside.
Melt the butter in a medium saucepan over medium heat. Add the garlic and
almonds, heating until almonds are lightly browned.
Add the mushrooms and sauté gently for 5 minutes or until soft.
Add the brandy and tarragon and mix well.
Pour the mushroom and brandy mixture over Brie, place on a baking tray and bake
for 15- 20 minutes, or until bubbly. Serve hot.
makes a quick, easy starter especially useful at Christmas and Easter.
