Mushroom Cocktail Veg CD
Serves 4 Cold Vegetarian Vegetables
Starter Appetizer Hors d'oeuvre
½ Round (Butterhead) Lettuce
225g/8oz Button Mushrooms, peeled
150ml/5fl.oz. Double Cream
2 tbsp Mayonnaise
2 tbsp Tomato Ketchup
1 tbsp Lemon Juice
Salt and Pepper
Lemon Slices to garnish
1. Wash, dry and shred the lettuce. Place
in the crisper drawer of the fridge until ready
Place the mushroom slices in a bowl, cover with boiling water and leave for 2
In another bowl, mix together the cream, mayonnaise, tomato ketchup, lemon, salt
and pepper. Add the mushrooms and mix well.
To serve - divide the shredded lettuce equally between 4 large stemmed glasses
spoon the mushroom mixture over the top of the lettuce. Garnish with lemon slices
and serve immediately.
