Cut each tomato into
season well with salt and pepper and set aside.
2. In a
bowl, beat together the eggs and Tabasco sauce.
In another bowl, mix together the breadcrumbs and Parmesan cheese.
Transfer to a large plate.
4. Dip the
tomato slices into the egg mixture then coat with the breadcrumb mixture,
pressing firmly to coat well. Repeat until all tomatoes are coated.
5. Heat the
oil in a large frying pan until hot and fry the tomato slices for about 3
minutes on each side until deep golden brown all over. Drain on kitchen paper
and serve immediately.
