Parmesan Fried Green Tomatoes Recipe

This is a slight twist on the traditional fried green tomato recipe which is popular in the southern United States. Perfect for those who grown their own tomatoes when there are often green tomatoes left on the vine at the end of the season.

4 Large Firm Green Tomatoes
2 Eggs, beaten
1 teasp Tabasco Sauce
50g/2oz Fresh White Breadcrumbs
50g/2oz Freshly Grated Parmesan Cheese
Salt and Black Pepper
Vegetable Oil for shallow frying



1. Cut each tomato into 6mm/¼-inch slices, season well with salt and pepper and set aside.


2. In a bowl, beat together the eggs and  Tabasco sauce.   Set aside.


3. In another bowl, mix together the breadcrumbs and Parmesan cheese. Transfer to a large plate.


4. Dip the tomato slices into the egg mixture then coat with the breadcrumb mixture, pressing firmly to coat well. Repeat until all tomatoes are coated.


5. Heat the oil in a large frying pan until hot and fry the tomato slices for about 3 minutes on each side until deep golden brown all over. Drain on kitchen paper and serve immediately.

Substitute the Tabasco with chilli powder or cayenne pepper
