Parmesan Fried Green Tomatoes

Hors d’oeuvre Snack Ingredients 4 Firm Green Tomatoes
50g/2oz Fresh White Breadcrumbs 50g/2oz Freshly Grated Parmesan Cheese Instructions 1. Cut each tomato into four even slices, season well with salt and pepper and set aside.
2. In a
bowl, beat together the eggs and Tabasco sauce, to taste.
3.
In another bowl, mix together the breadcrumbs and Parmesan cheese, seasoning
with salt and pepper to taste.
4. Dip the
tomato slices into the egg mixture then coat with the breadcrumb mixture,
pressing firmly to coat well. Repeat until all tomatoes are coated.
5. Heat the oil in a large frying pan until hot and fry the tomato slices for about 3 minutes on each side until deep golden brown all over. Drain on kitchen paper and serve immediately.
