1 tbsp Salt
1 tbsp Chopped Red Chilies
1 tbsp Khatai (mango) Powder
1 tbsp Cumin Powder
Oil for deep frying
1. Preheat the oil to 180C/350F. Trim the okra and make a slit down one side
but not all the way through.
2. In a small mixing bowl, mix together the remaining ingredients. Using a
spoon, fill in the okra with some of the spice mixture.
3. Fry the okra in batches for a few minutes until crisp. Serve hot with rice
or flatbreads e.g. roti, chapatti, naan or paratha.
