Cannelloni with Mushrooms Veg HT MC 40mins
Serves 4 Hot Vegetarian Vegetables Pasta Main Course Eggless
Ingredients 8 Cannelloni Tubes Salt and Pepper 100g/4oz Frozen Peas 50g/2oz Butter 175g/6oz Mushrooms, sliced 1 tbsp freshly chopped Basil 150ml/5fl.oz. Thick Béchamel Sauce 100g/4oz Cheddar Cheese
Instructions
1. Preheat the oven to 190C, 375F, Gas Mark 5 and grease a shallow ovenproof dish.
2. Bring a large pan of salted water to the boil, add the cannelloni tubes and cook for 5-7 minutes or according to the manufacturers instructions.
3. Meanwhile, heat the butter in a frying pan, add the mushrooms and sauté for a few minutes until just beginning to soften.
4. Add the mushrooms, peas and basil to the béchamel sauce and heat gently for 5 minutes, stirring from time to time. Adjust the seasoning.
5. Drain the cannelloni well and stuff with the mushroom mixture. Place in the greased dish, sprinkle with the grated cheese and bake for 15-20 minutes until brown and bubbling. Serve immediately.
