Chilli Omelette Veg HT MC 20mins
Serves 4 Hot Vegetarian Main Course Gluten Wheat Dairy Free
Ingredients 1 Medium Onion, finely sliced 2 Fresh Chillies, deseeded and finely sliced 1 tbsp Freshly Chopped Coriander (cilantro) 6 Eggs, beaten Salt and Black Pepper 2 tbsp Vegetable Oil
Instructions
1. In a large mixing bowl, mix together the onion, chillies coriander, eggs, salt and pepper.
2. Heat half the oil in a large frying pan, pour in half the egg mixture and cook over a medium heat until set. Turn and cook the other side until lightly browned.
3. Remove the cooked omelet from the pan and keep warm whilst you repeat with the remaining oil and egg mixture.
4. Serve immediately with a fresh tomato sauce.
