Spinach and Feta Omelette Veg HT MC 20mins
Serves 2-3 Hot Vegetarian Vegetables Main Course Gluten Wheat Free
Ingredients 300g/11oz Fresh Spinach 2 tbsp Butter 5 Eggs 8 Cherry Tomatoes, quartered 100g/4oz Feta Cheese, crumbled Freshly ground black pepper
Instructions
1. Wash the spinach well and shake off most of the water. Place in a saucepan with only the water which remains clinging to the leaves, cover and cook over a medium-high heat for 5 minutes, shaking the pan from time to time.
2. Remove from the pan, squeeze out as much water as possible then chop and set aside.
3. Melt the butter in a large frying pan over high heat.
4. In a small bowl, beat the eggs well then pour the eggs into the pan of hot butter and cook for 1 minute. Move the eggs around with a fork so that the uncooked runny parts reach the bottom of the pan, lifting the set parts if necessary.
5. Reduce the heat to medium then sprinkle the spinach, tomatoes, and feta cheese over the eggs. Season to taste with plenty of black pepper and continue to cook until the omelet has set, and the cheese has melted.
6. To serve - fold the omelet in half and slide onto a plate. Serve immediately.
