Student Chilli Omelette Veg HT MC 20mins
Serves 1 Hot Vegetarian Vegetables Herbs Main Course Gluten Wheat Dairy Free
Ingredients ¼ Medium Onion, finely sliced ½ a Fresh Chilli, deseeded and finely sliced ½ tablespoon Freshly Chopped Coriander (cilantro) or ¼ teaspoon Dried Ground Coriander 2 Eggs Salt and Black Pepper 1 tbsp Vegetable Oil
Instructions
1. In a large mixing bowl, mix together the onion, chillies coriander, eggs, salt and pepper.
2. Heat the oil in a small frying pan, add the egg mixture and cook over a medium heat until golden brown and just set.
3. Using a fish slice or spatula, carefully fold the omelette in half and cook the other side for 30 seconds only. Fold in half and slide onto a plate.
Serve immediately with a fresh tomato sauce or grilled tomatoes, salad or green vegetables and sautéed potatoes.
