Student Macaroni Cheese Veg HT 20mins Serves 1 Hot Vegetarian Pasta Main Course Eggless
Ingredients 75g/3oz Short Macaroni or other short-cut Pasta 25g/1oz Butter 1 tablespoon of Plain Flour 270ml/9 fl.oz. Milk Salt and Pepper A large pinch Cayenne Pepper 50g/2oz Cheddar, grated Optional - 1 heaped tablespoon Fresh Breadcrumbs mixed with 1 tablespoon grated cheese
Instructions
1. Bring a large pan of heavily salted water to the boil, add the macaroni and cook for 8 minutes or until just tender. Preheat the grill to high.
2. Melt the butter in a pan, add the flour and cook for 1-2 minutes. Gradually add the milk, little by little, stirring all the time and cook gently until the sauce thickens.
3. Remove from the heat and stir in the cheese, salt, pepper and cayenne.
4. Drain the macaroni well and return to the rinsed out pan over a very low heat. Add the cheese sauce and stir to mix thoroughly.
Optional 5. Pour the macaroni mixture into a shallow flameproof dish, top with the breadcrumbs and extra grated cheese which have been mixed together and grill until golden brown and bubbling. Alternatively, bake in a hot oven (200C, 400F, Gas mark 6) for 15 minutes.
Serve with grilled tomatoes and bacon
