Student Stilton Mushrooms

3 or 4 Large Flat Mushrooms
1 tablespoon Vegetable Oil or Butter
¼ Onion, finely chopped
25g/1oz Stilton Cheese
1 heaped tablespoon Fresh Breadcrumbs
Salt and Black Pepper
1. Preheat the grill to hot and line the grill pan with aluminium foil.

and chop finely.
Wipe the caps with damp kitchen paper
and place smooth side up in the gill pan and cook under the grill for 5 minutes.
Whilst the caps are cooking, heat the oil
or butter in a small saucepan add the chopped mushroom stalks and
onions and fry gently for 3-4 minutes, stirring from time to time.
Remove the pan from the heat stir a couple of times to cool a little, then add the breadcrumbs,
salt and pepper and
crumble in the cheese. Mix well.
Remove the caps from the grill, turn them over and divide the stilton mixture between the
smoothing lightly. Return to the grill and cook for about 5 minutes until
the topping is golden brown and bubbling.
