Cheese and Tomato
MC CD 25mins plus cooling
4 Cold Vegetarian Main Course
Cheddar Cheese, grated
tbsp Fresh Basil, chopped
Preheat the oven to 220C, 425F, Gas mark 7. In a bowl, mix together the cheese,
tomatoes, salt pepper and basil.
Divide the pastry in half and roll out to two oblongs about 30x10cm/ 12x4inches.
With a sharp knife, make cuts in one piece of pastry horizontally at 2.5cm/1
intervals to within 12mm/1/2 inch of the sides, being sure to keep the edges in tact.
Spread the tomato and cheese mixture over the middle of the uncut oblong of
pastry, dampen the edges with water, then cover with the cut piece of pastry.
Seal the edges well.
Place on a baking tray and bake for 20 minutes until golden brown.
To serve - wait until the pastry is cold, then slice into bars.
