Chicory Bake  Veg   HT  MC  Belgian  55mins


Serves  4   Hot  Vegetarian   Vegetables  Main Course  Gluten Wheat Free Eggless Belgium  Europe



4 Heads of Chicory, trimmed

Salt and Black Pepper

1 teasp Sugar

25g/1oz Butter

1 teasp Lemon Juice

4 Slices Gruyere Cheese

4 Tomatoes




1. Place the chicory heads in a large saucepan. Cover with boiling water and add a pinch of salt, the sugar, lemon juices and a knob of butter. Simmer for for 30 minutes, uncovered.


2. Preheat the oven to 220C, 425F, Gas Mark 7 and grease a shallow ovenproof dish.


3.  Drain the chicory and allow to cool slightly until cold enough to handle.


4. Wrap each head of chicory with a slice of cheese then place seam-down in the greased dish.


5. Surround with the halved tomatoes, season with salt and black pepper and dot with butter. bake, uncovered, for 20 minutes until golden brown. Serve immediately.
