Danish Blue Quiche Veg HT CD MC PIC 60mins Serves 4 Hot Cold Vegetarian Savoury Flan Tart Main Course Buffet Picnics
Ingredients: 225g/8oz Shortcrust Pastry 100g/4oz Danish Blue cheese 25g/1oz Full fat soft cheese 1/2 Green Pepper, sliced into rings 1 Tomato, chopped 2 Eggs 150ml/5 fl.oz. Single Cream Salt & Pepper Ground Nutmeg
Instructions
1. Roll out the pastry and line an 18 cm /7 inch flan tin. Heat the oven to 200C, 400F, Gas mark 6
2. . Line the pastry case with greaseproof paper and beans to bake blind for 10 minutes. Lower the oven heat to 180C, 350F, Gas mark 4. Remove the filing and bake the case for 10 minutes, to crisp the base.
3. Meanwhile, crumble the Danish blue into a bowl, add the soft cheese then mash the cheeses together with a fork, breaking up any lumps. Keep 2 pepper rings for garnishing and chop the remaining pepper.
4.Mix the chopped pepper and the tomato with the cheeses. Beat the eggs and cream together then add to the cheeses and beat until well blended and season to taste.
5. Pour the cheese mixture into the case and bake for 20-30 minutes or until set. Serve hot or cold.
