Pepper Frittata (Flat Omelette) Veg HT MC Italian 10mins Serves 4 Hot Vegetarian Vegetables Herbs Main Course Gluten Wheat Free Italy Europe
Ingredients: 1 Onion, finely chopped 1 Capsicum, (Sweet Pepper), chopped 5 tbsp Olive Oil 8-10 Eggs 1 tbsp Freshly chopped Parsley 1 tbsp Freshly chopped Chives 1 tbsp Freshly chopped Basil Salt and Pepper 50g/2oz Butter A little extra butter to glaze
Instructions
1. Fry the finely chopped onion and pepper in 3 tbsp of the olive oil, until soft.
2. Break the eggs into a bowl and stir them vigorously with a fork or wire whisk to mix the yolks and whites. Mix in the fried onions and pepper, herbs and salt and black pepper to taste.
3. Melt half of the butter and the remaining olive oil in a large frying pan. Pour in the egg mixture and cook the frittata, lifting the edges to permit the liquid egg to run underneath and shaking the pan to prevent sticking.
4. Turn the frittata on to a plate, melt the remaining butter in the pan and slide the frittata back into the pan. Cook for 20-30 seconds - the centre should remain soft and creamy.
5. Slide the frittata on to a heated serving plate. Glaze the surface with a little butter and serve immediately, cut into wedges.
