Green Capsicums,( sweet peppers) deseeded and chopped
Fresh Chili, deseeded and thinly sliced
Garlic Clove, crushed
teasp Dried Marjoram
Heat the oil in a frying pan, add the onions and garlic and gently fry until
golden. Add the capsicums, chilli and tomatoes
and cook over a high heat for 5 minutes
stirring. Mix in the salt, pepper and marjoram.
Reduce the heat and simmer for 30 minutes until reduced to a purée.
Lightly beat the eggs in a bowl and season with salt and pepper. Increase the
heat and pour in the egg mixture. Cook,
stirring, over a high heat for 3 minutes until
creamy. Serve immediately.
